So, I'm off to Milwaukee for Memorial Day weekend. My flight leaves tonight at 6pm. Chad and Arlin are dropping me off at the airport early so I can meet up with Siouxsicide to check our bags. We should arrive in Milwaukee the later part of nine o'clock tonight, then conferences start early in the morning. I've never been to Wisconsin before... Should be cool to get away from mommy duties for a few days and meet some girls that love roller derby just as much if not more than me!
The head of Women's Flat Track Derby Association (WFTDA) have put together quite an agenda for all of us. There are festivities planned for every night after the meetings let out. Friday night is a Fish Fry event, Saturday is a pub crawl and Sunday another dinner as well. The Hotel we're staying at shuttles to and from the airport for free, so we don't have to rent a car...which I think is awesome. They said bring swim suits so hopefully we'll have some down time to enjoy the pool!
So, mama signs off for a couple of days. Everybody cross your fingers for Papa! This is the first time he's had Captain Jack all by himself. He is bound and determined to teach Jack how to say "Papa". Shhh...I think Papa was a little jealous that the Captain's first words were..."Ma Ma!" (On Mother's Day I might add!)
And what better way to sign off...than with my new favorite cookie recipe!
(MOM- you must make these!!!)
1 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup butter (2 sticks) softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 tsp. vanilla
2 teaspoon orange zest (Clementine tangerine is better!)
3 cups quick oats ( Sugar Free Brown Sugar Oatmeal is key substitute-Trust me!)
1 cup white chocolate chips ( I ditch these- for lower fat cookies!)
1 cup dried cranberries (doesn't hurt to put a little more than a cup if you ditch the white chocolate- I used Ocean Spray packaged cranberries)
1) Preheat oven to 350 degrees.
2) In a medium bowl, combine flour, baking soda, and salt.
3) Beat softened butter and both sugars in a large bowl with electric mixer until creamy. Beat in eggs, vanilla, and orange zest. Beat in flour mixture. Stir in oatmeal one cup at a time. Add white chocolate chips and dried cranberries.
4) Drop batter by heaping teaspoonfuls, 1 inch apart, onto ungreased cookie sheets. Bake for 10-12 minutes. Let cool.
Per Serving: (keep in mind this count is with the white chocolate chips and regular quick oats)
